How to Make a Vegan Peach Cobbler

Ingredients

For the filling:

  • 1/iv loving cup brown saccharide
  • 2 tablespoons corn starch
  • 1/2 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • ane/viii teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 4 cups peeled, sliced fresh peaches or thawed, drained frozen peaches

For the topping:

  • 1-1/two cups all-purpose flour
  • ane/2 loving cup brown sugar
  • 1-1/2 teaspoons blistering powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • ane/2 loving cup cubed cold butter substitute, such as Earth Residual buttery sticks
  • ane/iv cup water
  • 1/2 teaspoon vanilla excerpt
  • one/2 teaspoon almond extract
  • 1/8 cup slivered almonds, optional

Instructions

Footstep 1: Make the peach filling

Preheat oven to 400°F. Mix together the brown sugar, corn starch, lemon zest, lemon juice, common salt and cinnamon. Once mixed completely, fold in the peach slices and gently mix until the peaches are well coated. Cascade the peaches and all of the sugar mixture into a greased eight×8-inch dish or pocket-sized (about 1 quart) casserole dish. Bake for 15 minutes. Set up aside.

Step 2: Make the topping

Meanwhile, whisk together all dry out ingredients, from flour to salt. Cut in the vegan butter substitute until the mixture looks like a rough, sandy mixture. In a split pocket-sized bowl, mix the extracts and water together. Mix into the topping mixture until simply moistened. If you want to add slivered almonds, stir them in gently.

Pace 3: Cease blistering

Drib heaping spoonfuls of the topping mixture on top of the peaches. Render the cobbler to the oven. Broil, uncovered, for twenty-thirty minutes more, until the topping is gold brown.

Serve the vegan peach cobbler warm with a scoop of vegan vanilla water ice foam. Or, for a midnight snack (or breakfast!), eat a piece right out of the fridge.
